Eating at home can be tough when you’re low on time and energy–and let’s be real–when you’re on a budget. This recipe for making reuben sandwiches at home is super quick and delish. Plus it’s family-friendly and will help you stay within your budget. I mean, 6 sandwiches for $10? That’s what I’m talkin’ about.
Dinner is served
This recipe can feed a family of 6 for one meal, or a family of 2 for three meals, all for just $10. Now that’s a deal. My mom used to make these sandwiches when I was growing up. And I was a pretty picky eater, but I loved these. Now my husband loves them too and requests them often.
These reubens are mouth-watering on their own, but you can add Thousand Island or Russian dressing for dipping. Add a pickle on the side, some carrots and ranch or potato chips, and voilà, dinner is served!

- 2 Tbsp. butter
- 4 slices rye bread
- 2 2-oz. packages Buddig corned beef
- 4 slices Swiss cheese
- 1/3 can sauerkraut
- Melt 1 Tbsp. of butter in a large skillet, then place 2 slices of rye bread over melted butter.
- Using one 2-ounce package of corned beef per sandwich, fold over slices of meat on top of bread, layering until one whole package of meat has been used on each piece of bread.
- Next, place 2 slices of Swiss cheese on top of the corned beef for each sandwich.
- After draining, use a fork to place a thin to medium layer of sauerkraut on top of the cheese slices.
- Top with 2 slices of bread and press down gently so the sandwich will stay together when turned.
- Cook for 3-4 minutes until browned.
- Remove sandwiches and add 2 Tbsp. butter to the skillet.
- Immediately (and gently) turn sandwiches into the skillet, uncooked side down.
- Cook for 3-4 minutes until browned and remove from skillet.
- Let cool for a couple minutes, cut diagonally, and enjoy!
- Optional: Serve with Thousand Island or Russian dressing, or they're delicious alone. Also great with a dill pickle on the side and some carrots and ranch dip.
Since making reubens requires a loaf of rye bread, which has 12 slices, we’re gonna look at the cost of 6 sandwiches. I usually buy my groceries at Walmart, but the prices at Target or other stores are probably pretty similar. So here’s the cost breakdown per ingredient:
- 1 loaf of Cobblestone rye bread: $2.67
- 6 2-ounce packages of Buddig corned beef at 68 cents each: $4.08
- 12 slices Great Value Swiss cheese: $2.22
- 1 can of Great Value sauerkraut: $0.77
Grand total: $9.74 for six sandwiches, that’s $1.62 per sandwich, woohoo!
I love that these sandwiches are so affordable. I got this recipe from my mom and every time I make them I think of her. I like to think she’d be proud of me for keeping it budget-friendly. I absolutely get excited about savings and frugal wins, and this is definitely one of them, and sooo yummy to boot. It’s a win-win!
